An apparatus for changing one or more physical properties of a material is disclosed. The apparatus comprises first and second grinding surfaces movable relative to one another, the first and second grinding surfaces being spaced apart by a distance whereby said distance is such that shear forces are applied to a fluid material entrained between the grinding surfaces when the first and second grinding surfaces move relative to one another. The apparatus also comprises first and second electrodes configured to apply an electric charger to fluid material entrained between the grinding surfaces.
